My Annual PSA

A few years ago I made an amazing discovery on a beautiful spring day. I don’t remember where I found this or when, but I was meal planning for the week and arbitrarily chose a grain salad that sounded interesting. Maybe a chef I follow on Instagram recommended it, maybe I found it on Pinterest, or maybe it just popped up on Google thanks to whatever keywords I was using. Regardless, this discovery changed my springtime (and summer!) meal rotation for good.

Since then I have shared this recipe at least once a year on Instagram and have received nothing but positive feedback. It is that good.

I introduce to you, Choosing Chia’s Mediterranean Quinoa Salad.

Here are some amazing things about it:

  • Meal preps like a gem (makes enough for multiple meals)
  • Gets better the longer it sits in the fridge
  • Can be eaten alone or with protein of choice (I recommend grilled chicken with this marinade)
  • Photographs beautifully
  • Bonus protein from quinoa AND it’s chockfull of veggies
  • Adaptable! Don’t like olives? Leave them out! Want to add in cherry tomatoes? It’ll still come together beautifully!
  • Comes together very quickly
  • Allergen friendly

I will admit that this salad is better when you cut the veggies really small. I don’t have the patience for this but we do have a veggie chopper that makes this whole process even easier and faster. You can get them for pretty cheap (if you don’t mind buying another kitchen item) but I’m not in the business of sharing Amazon or Target links these days!

Still not convinced? Let me paint a picture. You prepped this salad quickly in the morning before you went to work. The chicken marinates all day. You get home during a beautiful, sunny spring afternoon, grab a sparkling water, and fire up the grill. As you cook the chicken, you wipe down your outdoor chairs and table, or maybe you open your windows to let in some fresh air. Once your protein is cooked, you dish up your salad, add some extra feta (because why not), and sit down to enjoy your wholesome meal al fresco. I guarantee you will feel 10/10.
