Summer Cooking To Do List

As part of my ongoing pursuit to savor the rest of the summer, I have perused my saved recipes on Pinterest and in my bookmarks to gather my list of ultra-summery recipes that I still want to make!

Look, I am really looking forward to the fall and pumpkin recipes have been catching my eye more than I’d like to admit. HOWEVER, it is still berry // tomato // stone fruit // squash season, damn it! I simply must continue to reap the benefits of seasonal produce while I can.

Here are some of the fun recipes I have my eye on…

  1. Summer BBQ Chicken Chopped Salad from How Sweet Eats – this looks so good, and I LOVE a big, hearty lettuce-based salad in the summer. 
  2. 7-Layer Loaded Hummus Dip from Simply Scratch – enjoyed outside, with minimal mosquitoes (manifesting this), and a sparkling water? Maybe even a white wine? I’m into it.
  3. Peach Muffins with Streusel from Sally’s Baking Addiction –  YUM.
  4. Corn Salad with Chile and Lime from Smitten Kitchen – I want this served with grilled chicken or steak ASAP. I was never a big corn person until this summer!
  5. Almond Joy Chocolate Chia Pudding from Jenn Eats Good – I get into serious breakfast ruts sometimes and this sounds like such a fun, cool breakfast or snack for a warm July or August day!
  6. Herby Chickpea and Feta Pasta Salad from Ambitious Kitchen – I love pasta salad. I especially love a pasta salad with tomatoes and feta. Always satisfying in the moment, and such a delight to bring to work as leftovers!
  7. Homemade Granola from Cookie + Kate – this one spans beyond summer, but I love the idea of enjoying a homemade yogurt parfait with fresh berries and homemade granola!
  8. Homemade Chimichurri from Love and Lemons – inexplicably, chimichurri has been on my mind for weeks and I really want to make it at home. I don’t normally eat red meat, either, but a steak with chimichurri on it sounds unreal.
  9. Fresh Peach Ice Cream from Stephie Cooks – Patrick has been talking about this since we got our Ninja Creami in December! Maybe this will be the weekend that we buy some peaches from the farmer’s market and get to it.
  10. Fire Crackers from Southern Living – these came across my Pinterest recently and it immediately threw me back to maybe 2006-2008? Erica had a friend whose mom made them and they were SO GOOD.

Stay tuned to see if I make it through my list! We’ve got plenty of summer left to give these all a whirl.
