food and running, what’s new?!

I haven’t taken the time to sit down to write in a bit, but I did capture a few random photos from various happenings over the last week! We got back from Grand Cayman late on Monday, so I had a short week at work but it still felt oddly long. Last night I was surprised to realize that we were still in the Cayman Islands a week ago! 

That said, I really want to be sure that summer doesn’t just pass me by. It’s been very rainy here, which I think is killing the vibe a tad for me, but I want to fix that! Also, random thought here, but I’ve been reflecting more on my running and I can’t decide if I do want to do Rim to Rim to Rim this fall.

It was only my first week back to running and I am simply not acclimated to the heat and humidity yet, but I also find myself craving time to just run for fun and not be actively training for something. There are also some running goals/bucket list items closer to home that feel more inspiring at the moment than the Grand Canyon. I don’t know. I need to think on it more, but I was surprised when I realized that R2R2R wasn’t as inspiring as I expected – especially considering I’ve wanted to do it for a while!

Anyway, now that I have some random ramblings out of the way, here’s a little photo glimpse into my life from last week!

For dinner last week we made grilled chicken, greek salad (with freshly cubed feta), and orzo. It was so delicious, enjoyed al fresco, and the perfect meal for summertime. 

On Saturday, Patrick had a 22 mile run on the docket so we headed out to Signal Knob so that he could run a chunk of The Ring course. The day started gray and rainy, but then the sun came out and it was gorgeous (and hot)! 

I drove to a secondary location so that Patrick could pick up some aid and then I started my own run. To be honest, the route I did was probably a little too much too soon but I had fun! I listened to some podcasts and generally enjoyed being outdoors. After Patrick passed through I headed to Habron Gap (where Patrick would be finishing) and lounged around. 

There is access to the Shenandoah River there so I stood in the water and then convinced Patrick to take a quick dip when he was done! We really need to go tubing there. 

We slept in on Sunday and I made shakshuka for breakfast! This was maybe not the best recipe I’ve used, but I still enjoyed it. The house smelled like shakshuka for half the day but there are worse things!

We headed out to run again at a local park and I had a rough time. I didn’t even make it a full 10k in before I called it quits. I felt like I was working really hard, but was running really slow and still felt like I needed to take a bunch of breaks. I know I am capable of pushing through moments like that, but this felt like a time to just honor my fatigue and cut it short. 

My stomach was also really funky and the thought of eating any of my nutrition was really unappealing… an odd thing to happen on such a short run! We got home after Patrick was done and I ate more food and drank some electrolytes and immediately felt better. Funny how that happens!

As a belated birthday celebration, we made peach cobbler in the evening and enjoyed it outside with our friends with the sound of an incoming thunderstorm as our soundtrack! Honestly, wonderful. This photo might look like baked mac n cheese, but it wasn’t! 

Growing up, the peach cobbler I ate and made was cooked peaches with a biscuit-like dough dropped on top. I cannot find a recipe for that style to save my life! This one had you pour a pancake-like batter into the pan and then add the peaches on top. It was still delicious (and served with homemade vanilla ice cream), but not what I had in mind. Oh well!

I hope you have a restful, but fun week ahead! I think I’ll be a bit busy but am looking forward to having a good time.
